Roast Chicken

This is a recipe for incrediby tasty and crisp roast chicken - and it's very easy and fast. Total preparation time is just an hour. It's the covering of the chicken pieces with butter that makes this chicken so incredibly crispy and tasty.

Instead of roasting the chicken in the oven, you can also barbecue it - but be careful that the dripping butter doesn't start flames. Extinguish any flames on the charcoal immediately (best with beer).

Ingredients (serves four)

Preparation

Preheat the oven to 200° C (400 F - gas mark 6)

Preparing the chicken

Chicken Take off the fatty bits from inside the chicken
Chicken Cut off the "pope's nose"
Chicken Cut chicken in half along the back first
Chicken Then cut in half along the breast from the inside
Chicken Two chicken halves
Chicken Cut off the wing
Chicken then cut off the leg - try to cut through the middle of the joint
Chicken Take off the bottom bit of the leg - you probably aren't too keen on eating that bit anyway
Chicken Now cut off the remainder of the wing with a bit of breast
Chicken Then cut off the breast
Chicken Cut the rest in half - then repeat this with the other half of the chicken
Chicken And that's that - 12 lovely chicken bits

The Marinade

Chicken Press the garlic onto the butter
Chicken ... and add the Sambal Oelek. Put the butter into the oven until it starts to melt.
Chicken salt and pepper the chicken pieces
Chicken mix the butter and the spices until it is creamy and slightly liquid
Chicken put some of the butter on each chicken piece
Chicken and then rub it onto the pices with your hands.
Chicken Make sure all the pieces are nicely covered. Now put the tray into the pre-heated oven for 45 to 50 minutes.
Chicken The crispiest, tastiest roast chicken you ever had.
Chicken You can also barbecue the chicken - I can't really decide which one is my favourite...

Best with ...

Roast vegetables (potatoes, carrots, parsnips, onions) and a salad.

10Amazing crispy chicken. The chili mix is not hot if you are scared of chili. It is weaker than sweet chili sauce and once it is cooked you can not actually tell it is chili, you just get that delicious flavour. Fantastic recipe. Making it for the second time . I am converted!

8thanks, chopping up a chicken is not too easy, i spent most of my time wrestling with it, mine is just cooking. the only thing was i couldn't get hld of the chilli you mentioned so i got a chilli source which as not thick enough so the it is more of a tastey maranade, i have a side dish of feta salad with lemon drizzle Red or white wine and roasted potatoes ad carrots,
3more like curried chicken pieces. Whats with the pretentious comment about run of the mill chicken being rarther vile, you are covering it in garlic butter and chilli if that doesn't ruin it not a lot else will.

10this recipe is amazing! i bought a whole chicken to make roast chicken but was too scared to cook it whole, being an amateur cook, but the step by step guide on how to cut up a chicken and the recipe that followed was incredible! i didnt have sambal oelek so i substituted it for a different variation of it.. something i got from back home in malaysia..a paste used for making fried rice, and it turned out great..if i may say so myself! THX!!
