Beef Stew

A lovely winter warmer - beef stew with vegetables, pearl barley and lentils

Ingredients (feeds four)

Preparation

Beef Stew
StewHere are our ingredients for four. Chop the onions (see here) and the peppers (see here)
StewPeel and cut the carrot (first longitudinal through the middle and then into slices)
StewNow we marinate the beef with some Worcester Sauce ...
Stew... and a clove or garlic.
StewAdd some salt and pepper and let sit for half an hour.
StewFry the chopped onion in olive oil ...
Stew... and add the beef once the onions start to change colour.
StewWhen the beef is brown, add the peppers and fry together for another couple of minutes.
StewThen add your glass of wine and 750 ml of water.
StewThis is what is known in gastronomic circles as a beef stock cube :-) - I love the African expression "corrige maman" (freely translated as "correct your mum's cooking") for it - and that's what we will add here unless you had 750 ml of beef stock instead of the water...
StewNow it's time to add the dried spices (salt, pepper, paprika, oregano) ...
Stew... and the carrot.
StewNow we add the pearl barley,
Stewthe lentils ...
Stew... and a teaspoon of Sambal Oelek (hot chilli) if you want a bit of spicyness in your stew - you can leave that out if you'd rather not have it spicy. Put a lid on the saucepan and let the stew stew for two hours (or until the beef is tender). Do stir occasionally - you shouldn't have to add water but if it all gets soaked up by the barley and the lentils, please add some.
StewHere served with "Spaetzle".

Best with ...

homemade pasta or rice or potatoes or Spaetzle - accompanied by a green salad.

7A comment about NOT using Stewing steak would help this excellent recipe. Braising steak or brisket (unrolled) produces even better results. Stewing steak can be awful even though its's (slightly) cheaper)

9tastes delicious! I would recommend adding dumplings, 1 more stock cube, celery, runner beans, broccoli, more wine, more water and cooking for an extra 40 mins and loads of pepper and any other seasoning you fancy.

7It was good but when i tried to print it there were alot of boxes and it was quite hard to read. However other than that it was very good and easy to read.
6I don't think it's a good idea to add all of your spices at once like that. It is best to taste as you go, and add the amount it takes to get to the optimal flavor. Not every stew will be exactly the same, so taste as you go!
