Tastiest way to prepare leek

Pre-heat your oven to 180 degrees centigrade.

LeekCut both top and bottom end off the leeks. Then cut from the top down the middle until you hit the white section of the leek as we have to clean out sand and soil from inside the leek. Hold under running water and fan out the section you cut in half and thoroughly clean it out - otherwise you'll be chewing sand ...
LeekPut the leek(s) into a pyrex dish - add some water (about 5mm high), pepper the leek and grate some nutmeg on it. Add a knob of butter and half a vegetable stock cube. Put into the pre-heated oven. I don't use any extra salt on this as the stock cube and the butter already contain enough salt. After 5 minutes, make sure the vegetable stock cube has dissolved (you can help it along with a fork) and turn around the leek. Check every 15 minutes or so - turn the leeks around so they are moistened by the vegetable stock. That will keep them from burning. Total time in the oven is around 40 minutes - this is up to you depending how tender you want your leek - you can test with a knife.
LeekThis one has been in the oven for 40 minutes - which still leaves it with a bit of a "bite".
