Vinaigrette

This is a standard vinaigrette - the best salad dressing in my humble opinion

Vinaigrette

Use an old jam jar - pour the olive oil + balsamic vinegar into the jar. Add some salt, pepper and a tiny bit of sugar. Add one teaspoon of Dijon mustard. Close the jar and shake it well - finished! Keeps in the fridge for a couple of days if you want to make a bit more.

Vinaigrette

admittedly, it doesn't look great - but it tastes great! If you don't like the colour, use normal vinegar (apple or wine) instead - but use less (about 10 ml) as it's stronger than the balsamic vinegar.

White Vinaigrette This is a vinaigrette made with 50 cl olive oil, 10 cl white wine vinegar, salt, sugar, pepper and dill tips. If desired, add half a teaspoon of Dijon mustard. I use this type of white vinaigrette for light salads with fish or squid.

9Excellent. Try making it with a good Chardonnay, instead of vinegar, as a sauce with Monkfish. Serve with pine nuts.
